Photography by Alan Jensen Hotel de l’Europe, Amsterdam, NL
Chef Bas van Kranen has transformed Bord'Eau into Flore, a restaurant that is completely dedicated to conscious fine dining and located in Hotel de L’Europe. The intimate dining experience is given its own character thanks to the small and cosy space. The fascinating and original approach by the chef to nature, emphasizes vegetables, local distribution, and sustainability. His search for solutions fuels his creativity and leds to a very pure cooking style.
Accommodating this intimate experience in a space only consisting of 11 tables, overseeing a view of the lively neighbourhood and the Amstel River. Nicemakers has made a small upgrade to the original space taking inspiration from the natural elements within the experience and holds sustainability as one of the core factors within the design. Resulting into the use of natural elements, green scenery, the use of wooden panels and soft materials as well as fabrics for furniture and window decorations. The 360-degree wall decoration was specifically designed for the restaurant, it takes inspiration from paintings from the Great Masters of the19th century which come to life in the Space.
